Let’s talk potatoes shall we? The lowly dietary staple that everyone and his brother runs down as the unhealthiest thing ever. So simple, so ordinary we use it to describe lazy people ( couch potatoes ) or plain eaters ( meat and potato kinda-guy ). That potato.
Let’s just say straight out of the gate that I adore potatoes in just about any form. And I firmly disagree with any notion that they are unhealthy in any way. That isn’t what I want to talk about today. Nope, not at all. I want to talk about the processing of good healthy food into stuff that isn’t as healthy and costs a mega-truckload more to buy using the lowly potato as an example.
If you are on a budget you have probably noticed that the amount of food you can buy with your budgeted dollars is shrinking. Each month you’re getting just slightly less food than you did the prior month. Twelve months of slightly less food adds up to a sizeable reduction in how far your food budget goes each year. This has been going on for many years now and most of us are feeling the pinch most acutely. And by us I don’t just mean people trying to get processed food out of their families lives. I mean everyone.
Coming into the holiday season we are all spending at least a little more time in the kitchen. I’m spending a lot more time in the kitchen this week and I’ll bet you are too :-). I thought I’d take a few minutes today to check in with everyone with a reminder of the importance of keeping your kitchen ready to cook.
This is the simplest gravy ever! Southern kitchens particulary here in Texas serve this white country gravy up with just about everything. Most commonly you’ll see it served with Chicken Fried Steak, Chicken Fried Chicken, oh, er, or just about anything fried ;-). It’s delicious on mashed potatoes or rice. Gives pretty much everything a little added kick.
